I am thinking of taking the Holley Carb of my 66 327, and putting a Edelbrock on it. Has anyone done this, and do they have a "bolt on" model.

Welcome to CF!
I don't think you'll have any probs converting to the Edelbrock. It should be a straight up conversion.
I'd love to see pics of your '66!
