I have some gun metal z06 rims. The problem is that they have seen better days. My question is, can you use some aircraft stripper and then polish the metal underneath or is the metal underneath not be polished?

If you know what you are doing, yes, but it is probably better and cheaper to take them to a shop that will clean them up for you: find the right shop and it does not cost that much.
