I noticed that no one has answered your question. HOWEVER, I have no experience with the C3 vettes. My answer is, most likely no you do not have to remove engine. the reason for my answer, practicality. It would be impractical to require engine removal or even jacking the engine off of it's mounts to get to the pan. I have replaced oil pan gaskets in many other cars and never had to do anything with the engine. There shouldn't be anything in the way. I could be wrong as there has been some poor designing in many different makes but I donn't think so. Someone please tell me if I am wrong. Jack the car up and look under for the pan. If something is in the way, you should just be able to unbolt the pan and slide it out from in between the bottom of the engine and whatever is in the way under the pan.

No, you do not need to remove the engine. I don't think you need to even do something drastic like loosen the motor mounts and shift it slightly. I just know I replaced a pan (and gasket) on a '72 and we didn't remove the engine to do so.
That said, this is something that is much easier to do (but still maybe not THAT easy to do) when you have the car on a lift: it will be close to torture if you just have it on jackstands.
