I started up the car and the idle was the usual low, awesome sound for a few mins. I was talking to my friend, then it just scared the s*** out of me and went really high.

Does your idle stop solenoid have power to it any time the key is in the run position?

Not sure what that means.. lol
Since then I readjusted the carb.. but I've never gotten it to be the same. I wish I could get that sound back. What should I check?

On the driver's side of the carb, I believe that there's a solenoid which on most cars was to control run-on when you turned it off.  On early years, it was used to boost the idle when the A/C was turned on.  That's why I asked if it has 12V with the key in the run position.  If so, then that's where you adjust your idle speed.  The idle screw on the carb should be set at the solenoid off idle speed or just something appreciably slower than your idle speed.  That way when you shut it off, the solenoid allows the butterflys to almost close which prevents run-on or dieseling.

I have an Edelbrock carb on it now.. Should I still look around there for something like what you describe or could there be something else?

I'm sorry, I thought you still had a Q-jet.  I know nothing about the Edelbrock.  Is it their Q-jet clone?
