Personally, I like crate motors. But when I'm building it myself, I find that the folks at Summit, Edelbrock, Holley, etc. can be VERY helpful in planning what goes with what, and what you'll end up with. Talk to the folks at Edelbrock, and they will map out just what you should do, how much it will cost, and send you a parts list down to the nuts and bolts. They will even help you spec parts from other sources, like Holley for instance, as part of your build plan.

IMO,..... Edelbrock, and forget Holley. I'm goin' with Carter AFB's.
Other than that, bill has ya on the right track.
