Engine "Ping" or knock
No, not on any of four LS engines I've owned and abused. Real pinging or knock should not happen unless something is wrong.
If you are sure it is pinging, I'd take it to someone with a good OBD diagnostics set up, maybe even LS1 edit, and have them check everything over.

I have a 99 hardtop and think I'm hearing the same thing as you. It's doesn't sound like a loud "ping" but a small ticking sound in high gears at very low RPMs... Its done it for years now and I've never worried about it much. Maybe I should, but it hasn't caused me any grief luckily. It's so faint that people often can't hear it though.
It might be "piston slap," I've been told that earier LS engines had a bit of "rattle" at low RPM, high torque situations due to the "hypereuteric" (or however its spelled) pistons have a bit of play. It caused some owner concern but was not serious. I never had it myself or even heard it in a car but it was supposed to be there is some -- but no big deal.
I've heard that Seafoam does a good job of getting rid of carbon buildup on the pistons. Otherwise, throw in some concentrated Techron just before filling the tank. Do this before every oil change to keep carbon buildup to a minimum.
