I have the same Vette conv't in blue; I took the cats off altogether and noticed an increase in power. It didn't affect the performance at all, it increased it.

You can take the cats off, only problems you will have will be if your city has emissions testing and you might set an EGR code. ECM looks at O2 voltage readings when commanding EGR. It watches for a voltage change based on exhaust readings calculated with some backpressure produced by cats. Also on an 87, EGR uses backpressure along with vacuum to open EGR valve. [8D]

This is ONE of your cats. Yea all that from one you got two up front. Chop them off. Convert to true dual and have it WELDED NOT CLAMPED with some high performance mufflers NO FLOWMASTERS. They are not that free flowing as you think and have heavy drone.

with all of those problems you say you are having, it could be a lot of things causing a lack of power. maybe you could expand a bit and we can help you narrow it down.
