I just checked the resistance on my fuel injectors on my 85. They are all at 17 .5 ohms, give or take the small fluctations. Is this within an acceptable range?

Can I use my digital multimeter to check the power going to the injectors? How much power pulses through the conectors, and what setting should I be on to check them? What is the procedure?

yes that is acceptable, the key is that they are all relatively close together. You can check the volts, but that really wont do you any good. The injectors pulse so fast that the multimeter wont be able to refresh fast enough for you to see. The best thing you can get is a noid light to see the injectors pulsing. The ECM does not send more or less power to an injector to control fuel, it send the same amount of power to an injector, but contorls the length of time open and how often it opens. The fuel injectors have power on one side when key is on and are pulsed via ground by ECM which controls the lenght of ground time and time between pulses for calculated pulse width depending on TPS, ECT, O2, & MAP readings.
