I have a 93 C4 corvette with LT1 that had been sitting since 07. Lots of work but got it running with a lot of new parts and cleaning up. Took it out and the pressure gauge stays high (80 and above). New oil and filter, but not sure where to start and if it could be the oil sending unit or relief valve? Any ideas would be helpful.

My first question would be what type of oil did you use? If using the factory recommended oil then pull the sending unit out an hook up a mechanical test gauge to see where you really are at.

I did use the factory recommended oil and filter. I changed the oil sending unit and oil pressure is staying around 40 right now.

That's great job bringing her back to life, nice! Maybe make a build thread so we can follow your progress.
